1 cwater

1 cchopped red bell pepper

1/2 cchopped onion

1/2 cuncooked long grain rice

18 oz pkg turkey stuffing mix

2 cwater

4 ccooked, diced left-over turkey

3 lgeggs, lighlty beaten

110-3/4 oz can low-fat condensed cream of chicken soup

1/2 clow-fat sour cream
-
1/4 cfat-free milk
How To Make baked turkey and stuffing

1Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Set aside. In medium saucepan, bring 1 cup water to boil. Stir in red bell pepper, onion and rice. Reduce to low and simmer, covered until water is absorbed, about 20 min.

2In lg bowl, combine stuffing mix, 2 cups water. Stir in turkey, eggs and 1/2 the soup. Stir in rice mix. Spread mix in casserole dish. Bake, uncovered 40 min.

3In small saucepan, stir together remaining soup, sour cream and milk. Cook over low heat until heated through, stirring occasionally. Cut casserole into squares. Spoon sauce over squares.
