  • 1/2 stick
    butter
  • 1 md
    medium sized onion, skinned and finely chopped
  • 4
    fillet steaks, (london broil works great)
  • freshly ground black pepper and salt
  • 1/4 c
    irish whiskey
  • 3/4 c
    half and half or heavy cream

    Melt the butter in a large frying pan. Add the onion and saute gently for about 5 minutes, until just beginning to color. Remove onion w/ slotted spoon.

    Rub the steaks well with pepper and put them in the pan. Fry quickly for about 2-7 minutes on each side (the time depends on whether you prefer steak rare, medium or well done).

    Add some salt. Pour the whiskey over and ignite it. When the flames die down turn the steaks over and continue to cook for about 30 seconds.

    Move the steaks to a warmed plate. Add the removed onion and cream into the pan & simmer the drippings in the pan until it reduces to a thicker cream sauce. Spoon sauce over the steaks and serve immediately.
