shrimp. spinach and grits

My favorite seafood is shrimp and lobster..this recipe only contains the shrimp..it is rich in flavor and colorful.

Ingredients For shrimp. spinach and grits

  • 1 c
    quick cooking grits
  • 2 Tbsp
    olive oil, light
  • 1 1/2 lb
    large shrimp peeled and deveined
  • 2 tsp
    cajun seasoning
  • salt and pepper to taste
  • 3 Tbsp
    fresh lime juice
  • 3 clove
    garlic thinly sliced
  • 1 c
    frozen corn thawed or use fresh cooked
  • 2 c
    baby spinach
  • 1
  • 1 sm
    red bell pepper thinly sliced
  • 3
    green onions sliced

How To Make shrimp. spinach and grits

    Cook the grits according to package directions.Heat oil in skillet over medium heat, season the shrimp with the Cajun seasoning add the shrimp and cook for 2 minutes, turn and cook the other side for 2 minutes until opague, remove the skillet from the heat and add the lime juice and toss to coat. transfer to a plate.

    Wipe out the skillet and add the remaining oil..heat and add the garlic and cook stirring for about 2 minutes until golden...add the corn. pepper and spinach and stir together cooking for 3 to 4 minutes,,,add shrimp toss together and serve over the grits.
