Shrimp and grits has become a family favorite at our house, and it's a recipe that I truly enjoy making. It's relatively easy to prepare, it is not time consuming, and the joy that comes from those who enjoy it is worth every bit of effort that goes into it. For this recipe, I buy course ground grits from North Carolina. Adding the Rotel and some sharp cheddar cheese brings the taste of already delicious grits to a whole new level! Top it all off with delicious shrimp, bacon pieces and green onions...and you have a dish that will surely satisfy everyone! Enjoy!!

Ingredients For shrimp and grits

  • 1/2 lb
    bacon
  • 1 lb
    shrimp, peeled and deveined
  • 6 c
    water
  • 1 1/2 c
    course ground grits
  • 2 can
    rotel tomatoes and chilies, well drained
  • 2 c
    cheddar cheese, shredded
  • 4
    green onions
  • 1 Tbsp
    garlic powder
  • salt and pepper

How To Make shrimp and grits

    Wash green onions and cut off root end. Finely chop white and green parts of the onions. Set aside.

    Before cooking, cut bacon slices into small pieces.

    In a frying pan, cook bacon pieces until crisp. Remove from grease onto paper towel to drain, and set aside. Also, set bacon grease aside for later use.

    In a separate pot, heat water to boiling, adding salt and pepper to taste. Once boiling, stir in grits and reduce heat to medium. Cook until grits are thick and tender (the ones I have took about 20-25 minutes). Stir in drained Rotel and mix well, then incorporate cheddar cheese. Set aside.

    Reheat the pan of bacon grease. Once it is hot, put shrimp in the pan and sprinkle with 1 teaspoon of salt and 1 tablespoon of garlic powder. Stir as they cook so that they cook evenly and are well done.

    To serve, ladle grits into a bowl, top with shrimp, bacon pieces and chopped green onions.
