Ingredients For bacalau

  • 2 lb
    salt cod
  • 4
    medium potatoes
  • 3 Tbsp
    butter
  • 2
    medium onions, thinly sliced
  • 2 clove
    garlic, chopped
  • 1/2 c
    fresh parsley, chopped
  • 3/4 c
    olive oil
  • 1 1/2 tsp
    red pepper flakes
  • pepper to taste
  • 4
    hard boiled eggs
  • 10
    green olives, pitted
  • 10
    black olives, pitted

How To Make bacalau

    Soak salt cod in water for 24 hours, changing water several times.

    Boil water in large pot and add cod. Boil 5 minutes and remove. Reserve water for potatoes. Remove skin and bones from cod, flake, and reserve.

    Mix olive oil, 1 clove of garlic, red pepper flakes, pepper, and 1 T parsley, then pour over cod and mix to coat.

    Preheat oven to 350. Add whole potatoes to fish water, heat to boiling, and boil for 20 minutes. Drain and rinse with cold water. Peel and cut into 1/4" slices.

    Saute onions in butter until caramelized. Add garlic and cook one minute.

    Butter 8x11 pan. Layer half the potatoes, half the cod, half the onions, repeat. Bake for 15 minutes.

    Garnish with black and green olives, hard boiled egg slices, and parsley.
