medium onions, thinly sliced

1Soak salt cod in water for 24 hours, changing water several times.
2Boil water in large pot and add cod. Boil 5 minutes and remove. Reserve water for potatoes. Remove skin and bones from cod, flake, and reserve.
3Mix olive oil, 1 clove of garlic, red pepper flakes, pepper, and 1 T parsley, then pour over cod and mix to coat.
4Preheat oven to 350. Add whole potatoes to fish water, heat to boiling, and boil for 20 minutes. Drain and rinse with cold water. Peel and cut into 1/4" slices.
5Saute onions in butter until caramelized. Add garlic and cook one minute.
6Butter 8x11 pan. Layer half the potatoes, half the cod, half the onions, repeat. Bake for 15 minutes.
7Garnish with black and green olives, hard boiled egg slices, and parsley.
