A rich mushroom and onion pie. Serve with a green salad. No Hobbits were harmed in the making of this recipe.

Ingredients

refrigerated pie crusts, unbaked
3 Tbsp
olive oil
1 1/2 lb
button mushrooms, sliced
2 c
finely chopped onion
1/3 c
all purpose flour
1/2 c
stout beer
2
eggs, beaten
1 1/2 c
grated cheddar cheese, sharp
1 c
cottage cheese, small curd
1/4 c
fresh parsley, chopped
salt and pepper, to taste

Step-By-Step

1Preheat oven to 375 degrees F.
2Line a 9-inch deep dish pie pan with one crust.
3Heat oil in large frying pan and saute mushrooms until they start to soften. Add onions and cook over medium heat until onions are translucent.
4Remove from heat and add flour and beer, mixing well.
5Add remaining ingredients and season with salt and pepper.
6Pour in bottom crust and top with second crust. Crimp edges to seal and cut two slits in top to vent.
7Bake 40-45 minutes, or until crust is golden brown.
Let cool a few minutes and slice.
