Ingredients For spiced chickpea and feta sandwiches

  • 15 oz
    chickpeas, freshly cooked or canned, drained well (about 2 cups)
  • 1/4 tsp
    spanish smoked paprika or salt-free chili powder (reduced from 3/4 tsp., add more if desired)
  • 1/2 tsp
    ground cumin
  • 1 tsp
    ground coriander
  • 1/2 tsp
    caraway seeds
  • 1-2 clove
    garlic, peeled
  • 1 Tbsp
    lemon juice, to taste
  • 1-2 Tbsp
    extra virgin olive oil
  • salt and pepper, to taste

    tomatoes
  • 8 slice
    whole-grain bread or similar
  • fresh basil leaves, about 8-10
  • 2-3 oz
    feta, crumbled
  • 1/2 c
    carrot, grated

How To Make spiced chickpea and feta sandwiches

    Combine chickpeas, paprika, cumin, coriander, caraway, garlic, lemon juice, and olive oil in a food processor. PULSE a few times until chickpeas are coarsely chopped and slightly pasty, but not smooth. Season with salt and pepper to taste.

    Cut tomatoes into 1/4-inch slices.

    Spread each bread slice with chickpea mixture. Top half of the slices with tomatoes, then basil, feta, and grated carrot. Top with remaining bread slices. Cut in half before serving.
