Watermelon Meatballs !

I liked the Fried Watermelon so much that I developed several other recipes using watermelon rind.

No more wasting the watermelon rind!

These Meatballs taste great!

Ingredients

MEATBALL MIXTURE

8 slice
bread (crumbled fine)
4
eggs
1/4 c
water
3 lb
ground beef
1 large
onion (minced small)
2 lb
bulk italian sausage
1 Tbsp
each: basil and oregano (both dried)
1/2 tsp
salt
1 tsp
black pepper
1 1/2 tsp
garlic powder
1/2 tsp
cayenne pepper
2
sleeves of saltine crackers (crushed well)

WATERMELON

2 1/2 c
watermelon rind (prepared as described in ***notes)
1 Tbsp
olive oil
1 Tbsp
margarine

Step-By-Step

1Watermelon Rind: Cut the day before, into 1/4 inch thick strips, then cut strips into 1/4 inch pieces. Soak in salt water over night.

The next day: Rinse and drain well.

Saute in 1 Tbs. olive oil and 1 Tbs. margarine. Cooking until very tender. Cool. Add to meatball mixture.
2Mix all meatball ingredients together. Form into balls. Cook until done in skillet. (about 10 to 15 minutes).
3Serve as you would any meatballs!
