Taters and Sausage Bake

This dish is a FAVORITE in my house! There are 7 in my family and everyone loves it! As soon as they walk in the house they know what's cooking!
I always double this recipe. Leftovers, if any, are great for lunches the next day!

Ingredients

2 lbs.
potatoes, peeled and cubed
3-4
green onions, diced
2 cloves
garlic, minced (i always put extra in)
2 Tbsp
butter
3/4 c
milk
2
egg yolks
dash
each pepper and nutmeg
2 Tbsp
dried parsley flakes
1 lb
smoked sausage, sliced (kielbasa)
1/2 c
diced mozzarella cheese
2 Tbsp
grated parmesan cheese
1 tsp
dried thyme or sage

Directions Step-By-Step

Cook potatoes in boiling water until tender;drain and transfer to a mixing bowl;mash potatoes.

Add onions, garlic, butter, milk, egg yolks, pepper and nutmeg; beat until light and fluffy.

Stir in parsley, sausage and cheeses.

Spoon into a greased 2-quart baking dish.

Sprinkle with thyme.

Bake, uncovered, @ 400* for 30 minutes or until lightly browned and heated through.
