Hearty and tasty rice, meat, and bean dish. I have my Sofrito (Spanish cooking sauce) recipe posted. It is a versatile sauce you can prepare and make ahead of time to use for future cooking. In some markets, you can buy it bottled. But it is actually quite easy to make :)

Sofrito (Spanish cooking sauce)

Ingredients

2 c
long grain rice
4-5 c
hot water
1/2 c
sofrito (spanish cooking sauce)
1 pkg
goya sazon (with achiote)
16 oz
can small red beans
8 oz
can tomato sauce
16 oz
smoked sausage
3 Tbsp
oil
1 tsp
salt

Step-By-Step

1In a deep pan - add your oil, tomato sauce, sazon, and sofrito. Cook over a medium heat for 4 - 5 minutes. While you are waiting, this is now a good time to slice your meat in to 1/4 inch pieces. Then cut slices into quarters.
2Add your remaining ingredients. Then add your hot water to just 1 inch above the rice line.
3Bring to a boil, and cook over high heat until most of the water is absorbed. Give a gentle stir. Then cover and lower heat. Cook over low heat for 30 minutes or until rice is tender.
