Ingredients For spicy rice

  • 15 oz
    apple cider
  • 3/4 c
    long grain rice
  • 1 tsp
    butter
  • 1 Tbsp
    butter
  • 1/2 c
    dark raisins
  • apple cider to cover raisins
  • 1/2 c
    onion, chopped
  • 1/2 c
    celery, chopped
  • 1/4 tsp
    ground allspice
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    kosher salt
  • 1/4 tsp
    freshly ground black pepper
  • 1 1/2 Tbsp
    light brown sugar
  • 1
    granny smith apple, cored and chopped
  • 1/2 c
    sliced almonds, toasted

How To Make spicy rice

  • 1
    Place 15-ounces of apple cider in a 3-quart saucepan along with rice and 1 teaspoon butter. Cover and cook according to package directions.

    Place raisins in a microwaveable container and pour apple cider over to cover. Microwave on high for 1 minute. Set aside for 5 minutes; drain on paper towels.

    Meanwhile, melt 1 tablespoon butter in a large skillet. Saute onions and celery until crisp-tender, about 4 minutes. Stir in allspice, cinnamon, salt, pepper, and brown sugar. Stir in cooked rice and plumped raisins, and heat through. Stir in chopped apple and remove from heat. Cover and let stand for 5 minutes. Sprinkle with almonds and serve. Goes great with pork.
