Ingredients

  • EASY DOUGH
  • 1 can refrigerated pizza crust dough
  • HOMEMADE DOUGH:
  • 1 3/4 cups water, warm (110 degrees f.)
  • 1/2 cup + 1 tbsp olive oil, extra virgin
  • 2 tablespoons sugar
  • 5 cups all-purpose flour
  • 4 1/2 teaspoons active dry yeast
  • 2 teaspoons salt
  • SAUCE & TOPPINGS:
  • 1 tablespoon olive oil, extra-virgin
  • 5 cloves garlic, minced
  • 1 1/2 teaspoons oregano, dried
  • 1/4 teaspoon red pepper flakes
  • 1 - 6 oz cans tomato paste
  • 1 - 28 oz cans diced tomatoes with garlic & onion, undrained
  • 12 ounces parmesan cheese, fresh, grated
  • 24 ounces mozzarella cheese, fresh, shredded
  • 2 tablespoons basil, fresh, chopped
  • 1 pound bulk pork sausage, no casings, picked into small pieces
  • 3 1/2 ounces pepperoni slices
  • 1 stick butter
  • 10 ounces button mushrooms, fresh, sliced
  • 2 large red onions, diced
  • salt & pepper, to taste

How To Make sheet pan pizza - my way

  • Step 1
    HOMEMADE DOUGH: Grease a large bowl. Combine warm water, 1/4 C oil & sugar in a 2 C measuring cup. Using stand mixer with dough hook, mix flour, yeast & salt on low speed until combined, 30 seconds. Increase speed to medium low, add water mixture & knead until dough is uniform in texture, 3 minutes. Transfer dough to prepared bowl, cover with plastic wrap & let rise at room temperature until doubled in size, 1 - 1 1/2 hours. GETTING YOUR DOUGH TO RISE - TAKE YOUR PICK: TIP 1: Turn the oven on, no higher than 200 degrees F. Leave it on for 3 - 5 minutes then turn it off; leaving the oven light on. Then put the dough in to rise. You just have to make sure the oven isn't too hot, otherwise you'll start baking it! TIP 2: Put the pizza dough in an oiled ceramic mixing bowl, putting it on a stove burner & covering it with an inverted oiled, matching bowl. Also cover it with a kitchen towel. The oven is usually turned on to at least 200 degrees F.; however, if the oven is turned up a little higher (say, maybe 300 degrees F.), you can get your dough to double in approx. 30 minutes.
  • Step 2
    TOPPINGS: While dough rises, cook sausage in large skillet over medium heat broken up into pieces, until no longer pink, 8 minutes. Transfer to paper towel lined plate & let cool completely, 30 minutes, while blotting with more paper towels. Clean skillet. In same now clean skillet, melt butter over medium high heat until melted. Add onions; cook 10 minutes. Add mushrooms; cook another 10 minutes or until onions are browned. Season with salt & pepper. Transfer to plate & let cool completely, 30 minutes. On microwavable safe plate lined with 2 paper towels, arrange pepperoni in a single layer. Cover with 2 more paper towels & microwave 1 1/2 minutes. Let cool completely. Once all above are completely cooled, combine all (except pepperoni) in large bowl & toss with mozzarella cheese.
  • Step 3
    FINISHING HOMEMADE DOUGH or START EASY DOUGH: Evenly coat rimmed baking sheet with 1/4 C oil. On lightly floured surface, using rolling pin to roll dough into 16" x 12" rectangle. Transfer dough to prepared sheet & stretch dough to cover sheet, pressing dough into corners. Brush dough evenly with remaining 1 tbsp oil & cover with plastic wrap. Set in warm spot until slightly risen, 20 minutes. SEE NOTES IN STEP 1 FOR GETTING YOUR DOUGH TO RISE.
  • Step 4
    SAUCE: While the dough rises again, heat oil in large saucepan over medium heat until shimmering. Add garlic, oregano & pepper flakes until fragrant, 30 seconds. Stir in tomato paste & cook until beginning to brown, 2 minutes. Add tomatoes & simmer until reduced to 3 cups, 10 minutes. Turn off heat & season with salt.
  • Step 5
    Adjust oven rack to lowest position & preheat oven to 450 degrees F. Remove plastic wrap & using your fingers place indentations all over dough. Sprinkle dough with 1 C parmesan & bake until cheese begins to melt, 7 - 10 minutes. Remove sheet from oven & spoon sauce all over pizza, leaving a 1" boarder. Bake until sauce is deep red & steaming, 7 - 10 minutes.
  • Step 6
    Sprinkle meat/veggie/mozzarella mixture evenly over pizza; evenly space out pepperoni slices & then sprinkle remaining parmesan over toppings. Bake until cheese is golden brown, 12 minutes. Remove pizza from oven, sprinkle with basil & let rest 5 minutes before serving. Cut into 12 squares & enjoy!
