My Mom made this when we were growing and it is still a family fav. This is what I make when I want some comfort food. There are several versions of the recipe on here but ours is a little different; addition of pimientos adds a pop of color and sharp cheddar cheese... need I say more? Use your favorite bulk sausage. I like to use the hot; really kicks it up a notch!

Ingredients For sausage with wild rice casserole

  • 1 pkg
    6 (oz.) long grain and wild rice
  • 1 lb
    bulk sausage (cook's choice) browned and drained
  • 1 can
    cream of mushroom soup, undiluted
  • 1 sm
    can mushroom pieces
  • 1/2 c
    onion, chopped
  • 1/2 c
    green bell pepper, chopped
  • 1/2 c
    sharp cheddar cheese, shredded
  • 1/2 c
    chicken broth
  • 1 sm
    (4 oz.) jar of minced pimiento
  • 1 tsp
    parsley flakes
  • 1/2 tsp
    pepper

How To Make sausage with wild rice casserole

    Preheat oven to 350 degrees F. Cook wild rice as per directions, set aside. While rice is cooking, brown and drain sausage. Mix all ingredients together. Turn into greased 2 qt. casserole dish. Bake @ 350 for 1 hour.

    Serving suggestion: serve with a chilled salad and hot yeast rolls for a delicious meal.
