sausage with wild rice casserole

My Mom made this when we were growing and it is still a family fav. This is what I make when I want some comfort food. There are several versions of the recipe on here but ours is a little different; addition of pimientos adds a pop of color and sharp cheddar cheese... need I say more? Use your favorite bulk sausage. I like to use the hot; really kicks it up a notch!

1 pkg6 (oz.) long grain and wild rice

1 lbbulk sausage (cook's choice) browned and drained

1 cancream of mushroom soup, undiluted

1 smcan mushroom pieces

1/2 conion, chopped

1/2 cgreen bell pepper, chopped

1/2 csharp cheddar cheese, shredded

1/2 cchicken broth
-
1 sm(4 oz.) jar of minced pimiento

1 tspparsley flakes

1/2 tsppepper
How To Make sausage with wild rice casserole

1Preheat oven to 350 degrees F. Cook wild rice as per directions, set aside. While rice is cooking, brown and drain sausage. Mix all ingredients together. Turn into greased 2 qt. casserole dish. Bake @ 350 for 1 hour.

2Serving suggestion: serve with a chilled salad and hot yeast rolls for a delicious meal.
