1Cook sausage in a large skillet ovver medium heat, stirring until it crumbles and is no longer pink. Remove sausage and drain on paper towels, reserving 1 tablespoon drippings in skillet. Whisk flour intohot drippings until smooth. Cook, whisking constantly, for 1 minute. Gradually whisk in milk and cook, whisking constantly for 5 to 7 minutes, or until thickened. Stir in sausage, salt and pepper. Cut half buttermilk biscuits and ladle gravy over biscuits.
2Buttermilk Biscuits: Grease shortening on baking sheet. Put in flour in a large bowl. Cut shortening with pastry blender and mix well until well blended. Put the dough on a surface floured on wax paper. Knead 2 or 3 times and twist between your finger and thumb and roll into ball and put the dough ball on prepared baking sheet and flatten with your three fingers. Bake at 500 F. for 8 to 10 minutes. Cut biscuits half and put on a plate and ladle sausage gravy over biscuits.
