Ranch Mac & Cheese w/Bacon for Mailea...Cin's
Her Hubby not so much but he loved this dish I made while they were here over this week, the 4th of July (they arrived on the 1st).
If I'd known I was going to post the recipe, I would have taken some pix preparing it...but I only took "2".
One when it was ready for the oven and one when it came out of the oven.
I had it ready to come out of the oven the night they arrived...they ate the whole thing.
I hope you enjoy it as much as they did.

- 1 1/4 lb
- pasta of choice (cooked and drained)
- 2 jar(s)
- bacon flavored alfredo sauce ("2" 14 1/2 oz size jars)
- 7 slice
- bacon (baked in the microwave, crumbled)
- 1 oz
- envelope ranch dressing mix (dry)
- 1 1/4 c
- monterey jack cheese (i shredded)
- 1/4 c
- colby cheese (i shredded)
- 1/2 c
- pasta liquid
PREHEAT OVEN 300°F
BAKE APPROXIMATELY 30 MINUTES
Cook pasta to desired texture and drain (saving 1/2 c of your liquid).
Mix pasta in with the 2 jars of sauce; 1/2 cup of pasta water; and the envelope of the dry Ranch Dressing Mix. Place into a 9x13" baking dish (I used a corning casserole dish).
Stir all together and fold in 1/2 the cheeses and almost all of the crumbled bacon (saving some for top).
Sprinkle the rest of the cheese and crumbled bacon on the top and place in preheated oven for approximately 30 minutes (until bubbling hot).
I serve it with a tossed salad, homemade BBQ baked beans, my Cin's Beer Bread...and homemade sweet ice tea.
For dessert I made '2' homemade Cobblers (a Peach Cobbler and a Peach/Cherry Cobbler).
