Prep:

30 Min

Cook:

1 Hr

Ingredients

2 lb
boneless pork
1 Tbsp
olive oil ( i use grape seed oil instead)
1 tsp
chili powder
1 tsp
oregano, dried
1/2 tsp
cumin
2
onions
6
garlic pegs
16 oz
white corn, frozen
1 can(s)
black beans, 16 oz
1 can(s)
kidney beans, 16 oz
1 can(s)
chicken broth, 16 oz
1 can(s)
green chiles, mild chopped 4 oz - optional
1/2 c
green onions
sour cream
rice
corn bread

Directions Step-By-Step

1
The day before you plan to cook the stew
Cut pork into 1 inch pieces.
Season w/ ONION POWDER, GARLIC POWDER, CUMIN, OREGANO, CHILI POWDER, McCORMICK GARLIC & HERB(NO SALT) SEASONING, LAWRY'S SEASONED SALT. I just shake spices onto the meat.
Place in a zip lock bag, & fridge overnight.
2
In a large pot, heat oil, add the measured amount of CHILI POWDER, OREGANO, & CUMIN, cook 2 minutes on low heat.
3
Add ONIONS and meat, cook 20 - 30 minutes, stir often.
4
Add CORN, BEANS, & CHICKEN BROTH.
Smash & chop GARLIC, and add.
5
Start cooking RICE in another pot now.
Brown rice or wild rice take a bit longer to cook than white rice!
Cook stew 20 minutes. Medium heat.
6
Serve over RICE.
Garnish w/ SOUR CREAM & GREEN ONIONS
My family likes this with CORN BREAD
