Ingredients For pork piccata

1/3 call purpose flour
-
1/4 cpanko bread crumbs, toasted

1 tspsalt & pepper
-
1 1/4 lbboneless pork chops, 1/8" thick

1/2 stickbutter, divided
-
2 Tbspolive oil, extra virgin, divided
-
1/2 cwhite wine, dry
-
1/4 clemon juice
-
1 Tbspcapers (optional - i don't like them, so i don't use them)

6 slicelemon
-
1 Tbspparsley
-
egg noodles, no-yolk variety, cooked
How To Make pork piccata

1Preheat oven to 200 degrees F.

2In shallow dish, combine flour, panko, salt & pepper. Dredge chops in mixture.

3Melt 1 1/2 tsp butter & 1 tbsp oil in skillet over medium high heat. Add 1/2 of chops; cook 2 - 3 minutes per side. Trasfer to wire rack in rimmed baking sheet & place in oven to keep warm. Repeat with remaining chops, 1 1/2 tbsp butter & oil.

4Stir wine & next 3 ingredients into same (unwashed) skillet, stirring to loosen browned bits from bottom. Cook over medium high heat 2 minutes or until sauce is thickened & reduced by 1/2.

5Remove from heat; stir in remaining butter. Serve chops over egg noodles & pour sauce over pork & noodles; sprinkle with parsley.
