Ingredients For pork piccata

  • 1/3 c
    all purpose flour
  • 1/4 c
    panko bread crumbs, toasted
  • 1 tsp
    salt & pepper
  • 1 1/4 lb
    boneless pork chops, 1/8" thick
  • 1/2 stick
    butter, divided
  • 2 Tbsp
    olive oil, extra virgin, divided
  • 1/2 c
    white wine, dry
  • 1/4 c
    lemon juice
  • 1 Tbsp
    capers (optional - i don't like them, so i don't use them)
  • 6 slice
    lemon
  • 1 Tbsp
    parsley
  • egg noodles, no-yolk variety, cooked

How To Make pork piccata

    Preheat oven to 200 degrees F.

    In shallow dish, combine flour, panko, salt & pepper. Dredge chops in mixture.

    Melt 1 1/2 tsp butter & 1 tbsp oil in skillet over medium high heat. Add 1/2 of chops; cook 2 - 3 minutes per side. Trasfer to wire rack in rimmed baking sheet & place in oven to keep warm. Repeat with remaining chops, 1 1/2 tbsp butter & oil.

    Stir wine & next 3 ingredients into same (unwashed) skillet, stirring to loosen browned bits from bottom. Cook over medium high heat 2 minutes or until sauce is thickened & reduced by 1/2.

    Remove from heat; stir in remaining butter. Serve chops over egg noodles & pour sauce over pork & noodles; sprinkle with parsley.
