Ingredients For pork chops w/ butter herb sauce
- GARLIC HERB BUTTER:

1/2 stickbutter, room temperature

3 clovegarlic, minced

1/2 tsppepper
-
1 tspparsley
-
1 1/2 tspbasil, dried

1 tsporegano, dried
-
1 tspchives, dried
-
1/2 tsprosemary, dried
-
1/2 tsptarragon, dried
- REMAINING INGREDIENTS:

1leek
-
4pork chops, center cut, about 3/4" - 1" thick
-
1 tspsalt
-
1/2 tsppepper
-
1 Tbspolive oil, extra virgin
-
8 oz pkgmushroom blend, sliced, fresh (oyster, shiitake, baby bella)
-
1 cwhite wine
-
1 tsporegano, dried
-
1/2 tspthyme, dried
-
4 ozhoney goat cheese, crumbled
-

How To Make pork chops w/ butter herb sauce

1GARLIC HERB BUTTER: Beat all ingredients together with a fork until light & fluffy. Wrap into plastic wrap & roll into a log. Twist ends of plastic wrap to "seal" butter (kind of like a piece of candy). Store in freezer, at least 30 minutes or until ready to use.

2In a large bowl, add water & cut leek in 1/2 lengthwise & let soak, 30 minutes, swishing often. (This will get rid of the grit & sand that can inbed into the leek). After done soaking, dry & slice (white part only) thinly.

3Preheat large saute pan on medium high. Season chops the salt & pepper. Add oil to pan, add chops; cook 2 - 3 minutes per side or until browned. Remove from pan.

4Add mushrooms & leek to same pan; cook 4 minutes. Reduce heat to low; stir in wine & herbs.

5Return chops to pan; simmer 3 - 4 minutes or until wine has reduced by about 1/2.

6Remove pan from heat; transfer chops to serving plates & top with cheese. Whisk butter into sauce until melted & blended. Serve sauce over chops.
