1-2 lb pork loin cut in 1-inch pieces

1 onion, coarsely chopped
5 tomatillo, quartered
28 oz canned white hominy (2 14 oz. cans) drained
1 1/2 c frozen corn
3 Tbsp chopped cilantro (plus more for garnish)
5 c chicken broth, low salt
1 1/2 c chopped green chilies (canned)
3 Tbsp minced garlic
4 tsp red chili powder
2 tsp cayenne pepper
1 Tbsp crushed red pepper
1 Tbsp oregano, dried
2 Tbsp canola oil
coarse salt
black pepper
10 oz cotija cheese (crumbled) for garnish

This sounds fabulous but my slow cooker doesn't have a medium setting. Can I just put it on low for a longer time? How long would you recommend?

On low, make it about 90-120 minutes.

It was very, very good! I reduced the cayenne pepper to one teaspoon, though. I LOVE spicy food but, unfortunately it does not love me back :( Still, it was quite spicy. The only other change I made was to add a couple of scoops of Chia seeds. They don't change the flavor at all, absorb liquid (making it a bit thicker) and add a ton of nutrients. I served this with warm flour tortillas. I didn't have any of the cheese due to dietary restrictions but my husband did. Thank you for sharing this. I will definitely be making this again.

I have never cooked with hominy? so this recipe is calling my name. I love corn and grits. Can't wait to try it!

Nice shortcut to our longer, more involved posole. I will not be adding the cayenne or corn, first time out, but can't wait to try it. :0)

the recipe shows 5 cups of broth...and to use 1 cup to deglaze....do you use the rest of the broth which would b be 4 cups???
