Ok this is a twist on pigs in a blanket. Great for breakfast for a quick dinner or just a side dish at a party. My kids love this one. It's a complete meal in the palm of your hand or the end of your fork. I have to make a tripple batch to feed my three piggies.

Ingredients For piggy in the mud

  • 2 pkg
    cooked and drained (save drippings)total of 10 breakfast sausage links,pork,chicken or turkey cut in 1/3
  • 3
    of biscuit dough 10 count can
  • 1 1/2 c
    shredded mozzarella
  • 1/4 c
    bisquik mix
  • 1/4 c
    milk
  • 1/4 c
    pan drippings
  • 1/4 tsp
    each of the following, garlic powder,onion powder,basil,sage,poultry seasoning,sea salt and black pepper

    large eggs scrambles and seasoned to taste cook well but do not over cook.

How To Make piggy in the mud

    Cook each link and cut in 3 pieces add a little water to pan to form drippings cook on low to med temp to conserve as much of the drippings as possible. drain and set aside

    Roll each biscuit out with a roller pin or round end of a floured glass not to thin. place a piece of sausage in each biscuit and top with cheese and a little egg,do not over fill. fold over and seal edges well. place on un-greased cookie sheet. bake at 350 degrees till biscuit is golden brown.

    In frying pan bring to boil milk and drippings. reduce heat and add seasonings and bisquick slowly whisking constantly insuring no lumps are forming. continue to stir till drippings become a nice smooth gravy.too thick? add a little milk. too thin add a little more bisquick. remove from heat and serve on the side of plate with piggies Makes 30 piggies. and 2cups of mud.
