bone in center pork chop (this should be 2 chops, .75lb each)
ground smoked paprika
In medium, non-stick, oven-safe skillet heat coconut oil to medium high.
Meanwhile, using a kitchen mallet, tenderize the chops. Reshape the chops and press each side into the rub. Rub well into meat.
Sear chops for 4 mins, turn and sear for 4 minutes on other side. Drain off excess oil and leave chops in skillet.
Place in oven until internal temperature reaches 150. Allow chops to rest 10 before serving.
