Vicki's Notes:

This recipe might taste a little different to those who try it, because I use my own homemade pasta sauce as one of the ingredients. Putting in your own would probably make it more appetizing for you and family because its the flavor you are used to and like.

Great as left-overs for sandwiches too.

Directions

1
Preheat oven: 350 degrees.

In a large bowl - add all ingredients and mix up well
2
Form into a loaf for your casserole dish, or put into a loaf pan
3
Bake @ 350 degrees - uncovered for 1-1/4 Hours.

Hopefully, the meat gave you enough juices to make your own gravy. If not, you can always improvise.
4
When done. Let rest for several minutes, remove to a cutting board and slice. Enjoy!

Would you share your pasta sauce recipe when you get a chance. I canned my first spaghetti sauce last summer and would love some new recipes to try. Meatloaf looks good I wll have to try it!

Hi Andrea, Not sure I will post the sauce recipe. I do no measuring. Its all "feel" for 40 years! Never purchase sauce. My mother was sicilian and we were raised on homemade all the time. My son even tries his hand at it, but he says it never turns out like mine...even though I tried guessing at ingredient amounts and processes. I now make mine from home grown plum tomatoes. For years, used tomato puree and paste.

I understand! I have several recipes that are by feel also. My family has an almond roca recipe that hs been in our family for close to 100 yrs. , we have given the recipe to several friends who wanted to learn to make it and none of them could get it to turn out right. I think some recipes are just "in the genes"!

lol! I think you're right about that, Andrea. Its like my mother's meatballs. I swear I put the ingredients in just like she did....but, they never taste the same!
