I love meatloaf and I especially liked it when my Mom made it. I like to make a sandwich out of the leftovers the next day....mmmm delicious. These web photos are ideas of how the finished product looks.

Ingredients For mom's meatloaf

  • MEATLOAF:
  • 2 lb
    ground beef (beef and pork mix or turkey)
  • 1 md
    onion chopped
  • 1
    bell pepper, chopped
  • 1 c
    celery, diced
  • 1 sm
    can evaporated milk
  • 2
    eggs, slightly beaten
  • 1
    sleeve saltine crackers, crushed
  • 1 sm
    can tomato sauce
  • 1 sm
    can tomato paste
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground black pepper
  • GLAZE:
  • 1/3 c
    dark karo syrup
  • 1/2 c
    ketchup
  • 1/4 c
    brown sugar

How To Make mom's meatloaf

    In a large bowl, combine meat, onion, bell pepper, celery, tomato sauce, tomato paste, salt and pepper. Mix thoroughly with your hands.

    In a separate bowl, combine the eggs and canned milk. stir well to combine.
  • 3
    Pour this mixture into the meatloaf mixture and mix thoroughly with your hands. Add enough cracker crumbs to make the mixture stick together.

    In a separate bowl, combine the ingredients for the glaze and stir until well combined.

    Mold the meat into 2 loaf pans or 1 similar deep dish casserole dish. pour the glaze on the top of the meatloaf. Cover with aluminum foil and bake at 350F for about 1 1/2 hours.

    After the meatloaf bakes for 1 hour, remove it from the oven, drain some of the liquid from the pan and put it back into the oven, uncovered, and finish baking.

    This can even be baked in muffin tins. Split the meat into equal portions and put them in your muffin tin and bake for @ 40 to 45 minutes. Makes 14 - 16 "muffin" meatloaves. The kids love this that way.
