Ingredients For *** mom's crown roast (lamb or pork) ***

2 Tbspolive oil, extra virgin

1lemon, zested & juiced

4 clovegarlic, peeled & chopped

1 Tbspsage leaves, fresh, chopped

2 Tbspthyme, fresh, chopped

1 Tbsprosemary, dried

1 tspsalt & pepper
-
3 lbboneless pork roast or lamb roast
How To Make *** mom's crown roast (lamb or pork) ***

1Preheat oven to 450 degrees F.

2In bowl, combine, oil, 1 tsp lemon zest, 1 Tbsp lemon juice, garlic, sage, thyme, rosemary, salt & pepper.

3Place roast in roasting rack/pan. Brush mixture all over meat. Roast 20 minutes (for medium rare). Sit 10 minutes before slice.
