I don't care for chili beans so I adapted my own recipe! I always get rav reviews and requests for the recipe! Crowd pleaser! My husband doesn't want me post this recipe, but it's too good not to share! I like to do the prep ahead of time when I can.
Preheat oven to 400 degrees, when heated, place bacon on cookie sheet for approx. 12 min. Let drain on paper towels. When cool, give a rough chop, set aside. Meanwhile, in a large skillet, spray w cooking oil. Saute celery, onion, green pepper, jalepeno peppers and garlic over medium heat til tender. Then add ground beef and sausage. Cook til no longer pink, drain.
In a large pot or crock pot, add meat/veggie mixture. Add all remaining ingredients. Stir. Let simmer on low for 3 hours. Enjoy!
Optional toppings: shredded sharp cheddar cheese, diced onion, sour cream, bacon, cilantro. I have served this in a bread bowl and let guests choose their toppings! Makes a nice presentation too!
