This is my mini version of one of my favorite sandwiches...perfect for lunch or as a snack. I hope that you will try this easy and delicious lil' sammie. Cooking with, Passion,sw :)

Ingredients

4
english muffins, split
2 Tbsp
extra virgin olive oil, divided
4-6 oz
mozzarella cheese, sliced & divided
6-8 Tbsp
olive tapenade
4 slice
ham, julienne
4 slice
mortadella, julienne
4 slice
slices genoa salami, julienne
4-6 oz
mozzarella cheese, sliced & divided
2-4 pinch
creole seasoning

Step-By-Step

1Preheat oven to 400 degrees. Place muffin halves on a cookie sheet. Brush the tops of muffins with half of the olive oil. Top each muffin with equal parts cheese, tapenade, ham, mortadella, salami and remaining cheese.
2Sprinkle Creole seasoning and a drizzle remaining olive oil on top. Bake for 15 minutes or until the muffins are golden brown and the cheese has melted.
3Bake for 15 minutes or until the muffins are golden brown and the cheese has melted. Remove from oven and enjoy.
