meatloaf with sweet-and-hot sauce

Found this in an old cook book. We really like meatloaf, so I tried this version and it is very tasty! My kids and grand kids loved this as well. Hope you like it to! Picture is not my own.

Ingredients For meatloaf with sweet-and-hot sauce

  • preheat oven to 400 d/f, spray an 8 1/2
  • 1 lb ground pork and 1/2 lb ground beef
  • 1 c plain bread crumbs soaked with a small amount milk
  • 1 large egg, lightly beaten
  • 1 clove garlic, minced
  • 1/2 cup onion, diced
  • 3 tbls fresh flat leaf parsley or 1 tbls dried
  • 1/4 c low sodium chicken broth
  • 1 tsp salt and freshly ground black pepper to taste
  • for sweet and hot sauce:
  • 1/3 cup prepared ketchup or tomato sauce - i used heinz ketchup
  • 1/2 cup sugar
  • 1/3 cup water
  • 1/3 cup white wine vinegar
  • 1 tbl low sodium soy sauce
  • 1/2 tsp cayenne pepper or to your taste
  • 1 1/2 tbls cornstarch mixed with 3 tbl cold water

How To Make meatloaf with sweet-and-hot sauce

    Combine ingredients for meatloaf; mix well. Spray pan with Pam. Place into loaf pan and bake until an instant read thermometer inserted in middle of loaf reads 155 D/F 45 to 50 minutes. While this is cooking, make the sauce.

    In a saucepan over medium-high heat, combine the ketchup (or tomato sauce), sugar, water, vinegar, soy sauce and cayenne. Heat stirring occasionally, until the mixture comes to a boil, then immediately whisk in the cornstarch/water mixture. Stir constantly until thickened, about 30 seconds. Remove from the heat and let cool to room temperature.

    When the meat loaf is done, remove it from the oven, cover to keep warm, and let stand for 10-15 minutes before slicing. Pour off any excess fat in the pan. Cut the meat loaf into slices 1/2 inch thick. Serve immediately with the sweet-and-sour sauce on the side.
