This has ham and mozzarella cheese,that is rolled up in the meatloaf.

Ingredients

2 large
eggs
3/4 c
soft bread crumbs
1/2 c
tomato juice
1/2 tsp
orengano
1/4 tsp
salt
1/4 tsp
pepper
1 small
clove..minced
3 Tbsp
snipped parsley
2 lb
very lean ground beef
8
thin slices boiled deli ham
1 1/2 c
shredded mozzerella cheese
3
squares sliced mozzerella cheese..halved diagonally

Directions Step-By-Step

Combine 1st 8 ingredients.Stir into ground beef;mixing well.
On foil,pat meat to a 10"x12" rectangle.
Arrange ham slices on top of meat,leaving a margin along edge.
Sprinkle shredded cheese over ham.

Start from the short end carefully,roll up meat,using foil to lift. Seal edges And ends well.Place seam side down in a 9"x13" baking pan.

Bake 1 hour then place the cheese wedges over top of roll..Return to oven 10 minutes or until cheese melts.
