Highly addicting & FULL of flavor, this macaroni is easily at home here in the Deep South along with some pork ribs or pulled pork sandwiches! Mmmmmmmmmm! Sounds good to me!

Ingredients For hawaiian macaroni salad

  • 1 lb
    macaroni, elbow
  • 1/2 c
    apple cider vinegar
  • 2 c
    milk, whole (don't use any other kind - too thin otherwise)
  • 2 c
    mayonnaise (see note)
  • 2 Tbsp
    dark brown sugar
  • 6
    scallions, sliced thin
  • 1/2 lg
    red onion, sliced thin
  • 1 lg
    carrot, shredded
  • 1 rib
    celery, sliced thin
  • 1 c
    pineapple chunks, fresh
  • salt & pepper

How To Make hawaiian macaroni salad

    Bring 4 qts of water to a boil. Add 1 tbsp salt & macaroni; cook until VERY soft, about 15 minutes. Drain & return to pot; add the cider vinegar & toss until absorbed. Let cool for 10 minutes. NOTE: Cooking until very soft makes the dressing stick to it.

    Meanwhile, whisk together 1 1/2 C of the milk, 1 C of the mayonnaise, brown sugar, 1/2 tsp of salt & 2 tsp pepper. NOTE: DO NOT USE MIRACLE WHIP IN THIS RECIPE - YOU WILL RUIN IT! NOTE: Instead of using milk & brown sugar - you can use 1 can of sweetened condensed milk & white sugar.

    Once the cooked pasta has cooled for 10 minutes, whisk in the dressing. Let cool completely.

    Add the remaining 1/2 C milk & 1 C of mayonnaise, along with the scallions, onion, carrot, celery & pineapple. Stir to combine, then season to taste with salt & pepper. Chill for at least 2 hours before serving.
