Ingredients For ham fried rice w/pineapple & fried egg

3 Tbsppeanut oil
-
1 lgonion, diced
-
3 clovegarlic, minced
-
2 tspginger, minced
-
1 pkgchinese pea pods or frozen peas or mixed chinese vegetables, thawed

6 cwhite or brown rice, cooked
-
1 tspsalt
-
3 cham, deli style, diced (4 - 1/4" - 1/2" thick slices)
-
2 - 20 oz. canpineapple chunks, undrained
-
1/4 csoy sauce, low sodium
-
2 Tbspapple cider vinegar
-
1 tsptabasco
-
8 lgeggs
- GARNISH:
-
scallions, chopped (both greens & whites)

soy sauce, low sodium
How To Make ham fried rice w/pineapple & fried egg

1In a wok or large skillet, heat the peanut oil.

2Add onion, garlic & ginger. Cook until golden (about 3 minutes).

3Add rice & fry until coated with the oil & slightly golden (about 2 minutes).

4Add salt, ham, pineapple, peas, soy sauce, vinegar, & tabasco. Toss & cook 2-3 minutes.

5In a separate skillet, crack the 4 eggs & fry at medium heat sunny side up, or to your liking.

6Place fried rice onto a platter & place fried eggs on top.

7Garnish with scallions & a drizzle of soy sauce.
