I AM A RECIPE HOUND, I FOUND THIS IN A MAGAZINE QUITE A LONG TIME AGO...(ONCE APON A TIME..LOL)..ANYWAY...IT LOOKED GOOD, AND IT DEFINITELY IS GOOD...AND IT'S EASY TO MAKE AS WELL...

should be small leeks (trimmed of all but 1 inch of greens well rinsed)

RINSE THOROUGHLY UNDER COLD RUNNING WATER...

ARRANGE IN A SINGLE LAYER IN A LARGE HEAVY SKILLET.

SPRINKLE WITH SALT AND PEPPER TO TASTE AND DOT WITH BUTTER...

ADD WATER TO COVER..

PLACE OVER LOW HEAT, PARTIALLY COVER AND POACH UNTIL TENDER, (APPROXIMATELY 20 - 25 MINUTES...

DRAIN THOROUGHLY ON PAPER TOWELS...
