This is an unusual but attractive pork tenderloin recipe.

We are in love with this delicious grilled pork tenderloin. Since it's wrapped in bacon, its smoky flavor infuses into the juicy and tender pork. Fresh blueberries and cherry tomatoes add pops of sweet flavor and balance out the tangy vinegar in the blueberry sauce. This a great summer grilling recipe if you're looking for a fancier meal.

Ingredients For grilled pork tenderloin with blueberry sauce

  • 1-1 3/4 lb
    pork tenderloin
  • 3 slice
    bacon
  • BLUEBERRY SAUCE
  • 2 Tbsp
    butter
  • 2 md
    onions, sliced
  • 1/2 tsp
    salt and pepper
  • 2 Tbsp
    sugar
  • 1/4 c
    sweet sherry or chicken broth
  • 2 Tbsp
    balsamic vinegar
  • 1 c
    fresh blueberries
  • 1 c
    cherry or grape tomatoes, cut in half

How To Make grilled pork tenderloin with blueberry sauce

We used a gas grill and cooked the pork over indirect heat.
  • Pork tenderloin wrapped in bacon on a grill.

    For the tenderloin, wrap the tenderloin in the bacon slices. Grill over medium-hot coals, covered with grill lid, for 20 to 30 minutes.
  • Sauteeing onions until golden.

    BLUEBERRY SAUCE: Melt the butter in a large skillet over medium heat. Add the onions, salt, and pepper. Saute until onions are golden brown, about 10 minutes. Stir in the sugar and cook for 2 minutes, stirring constantly.
  • Wine, vinegar, blueberries, and tomato halves added to onions.

    Stir in the wine and vinegar. Bring to a boil. Boil gently for 3 minutes. Stir in the blueberries and tomato halves. Cook just until heated through.
  • Blueberry sauce spooned over slices of pork tenderloin.

    To serve, cut the tenderloin into thin slices and place it on a serving plate. Spoon the blueberry sauce over the top.
