Grill

Ingredients

2 c
water
2 c
dark beer
1/4 c
coarse salt
4-6
center cut pork chops, about 1-inch (3 cm) thick
6-8
cloves garlic, finely chopped
2 tsp
dried sage
salt and freshly ground pepper to taste

Directions Step-By-Step

1
Combine the water, beer, and salt in a bowl and stir to dissolve
the salt. Place the pork chops in a resealable plastic bag and
add the brine mixture. Refrigerate for 4 hours, turning the bag
occasionally.
2
Remove the pork chops from the brine (discard
the brine) and pat dry with paper towels. Mix the garlic, sage,
salt, and pepper in a small bowl and rub the mixture on both
sides of the pork chops.

moderate heat until they reach 145F (63C) on an instant read
