Ingredients

pork roast, 3.5-4 pounds

1/3 c grapefruit juice
2 Tbsp olive oil
1 Tbsp chopped chipolte pepper in adobo sauce, seeds removed
2 Tbsp garlic, crushed
1 tsp salt
1 grapefruit, sectioned

Melissa's Notes:

This roast is so tender it needs only a fork! The flavors are very subtle and there is no heat from the pepper.
You really must make it to understand. Complex, yet balanced.

 

Directions

Place roast in a large bowl. Mix remaining ingredients in small bowl and pour over roast.
Marinate in fridge for 30 minutes. Turn over and marinate for additional 30 minutes.

Preheat oven to 350 and place roast in a roasting dish with a lid. Cover and bake for 2 hours. Reduce heat to 250, turn roast over, and continue cooking for 1 hour, covered.

Remove roast from oven and transfer to serving platter. Squeeze juice from 1 section of grapefruit over roast. Allow to settle for 10 minutes before cutting. Garnish with remaining sections of grapefruit.

AHHH, I have to fix the directions. But it is a minor fix. When you are done cooking for 2 hours and reduce the heat...turn it over! Ugh!

Melissa, with the leftovers I made shredded pork tacos. This came out better then anything I have eaten ever. I live in Califorina and we have Mexican food places everywhere.
