Easy Ham and Potato

- cooking oil
- onion, chopped
- bell pepper, chopped
- 4 c
- cubed, cooked potatoes
- 2 c
- cubed, cooked ham
- 1/2 c
- 2 c
- shredded cheese. i use an italian mix, preshredded. all mozzarella works well also.
1A large non stick skillet works best.
Cook the onions and bell pepper on medium-low heat in oil just until softened.
2Add the potatoes, ham and mayonnaise. Stir well until well heated.
3Stir in the cheese until melted.
Serve and enjoy as main meal, lunch or a side!
