Easy Ham and Potato

This is a recipe I have had for a while and tweaked it a bit to add some veggies. It is so cheesy and a great way to use leftover ham.

Ingredients

2 Tbsp
cooking oil
1/2
onion, chopped
1/2
bell pepper, chopped
4 c
cubed, cooked potatoes
2 c
cubed, cooked ham
1/2 c
mayonnaise
2 c
shredded cheese. i use an italian mix, preshredded. all mozzarella works well also.

Step-By-Step

1A large non stick skillet works best.
Cook the onions and bell pepper on medium-low heat in oil just until softened.
2Add the potatoes, ham and mayonnaise. Stir well until well heated.
3Stir in the cheese until melted.
Serve and enjoy as main meal, lunch or a side!
