Ingredients

2 or 3 meaty, bone-in pork ribs

3 carrots, cut into chunks
4 baby red potatoes, sliced thinly
One yellow onion, sliced
Two tsp garlic, chopped (i keep a jar of this in the fridge)
1/3 c apple cider vinegar
1 or 2 dash(es) garlic salt or powder with parsely
1 dash(es) lemon pepper
1 Tbsp olive oil, light
1 tsp died tarragon

Miriam's Notes:

Got tired of ordinary , non-barbecued ribs, and started grabbing supplies on hand. Very tasty.

 

Directions

Remove any excess fat from pork ribs, then brown ribs lightly in olive oil. Set aside on plate.

Place carrots and potatoes in microwave-safe dish, add water to cover, microwave for about 4 minutes on high. Drain off water.

Make a layer of onions, potato slices (these can also be placed around the inside of the crockpot) and carrots, place a pork rib on top. Sprinkle some of the garlic and spices on meat, then repeat process until crockpot is filled. Pour apple cider vinegar over everything, put the lid on, fire up the crockpot, and simmer everything on low for at least 8 hours. If you like, sprinkle a little brown sugar in there, too. This is the sort of recipe that lends itself to being inventive. Enjoy.

I am going to have to try this in the slow cooker I bought to make bone broth for my son when he was going through chemo. I can fill it up... it is a big one! Thanks for the recipe!

What, exactly, is a slow cooker? I hear about them all the time. Any similarity to crockpots? (I got my little pot in a drugstore for about ten bucks, lol. Just the right size for me, too.) You're welcome!

Slow Cooker and Crock Pot are the same thing... different name same purpose. Mine is a 7 quart. I do have an older one. Smaller but not sure of the quart size. I like the digital ones. They have some advantages.

I've never seen a digital one. I guess I'm still in that stage of, you don't need the fancy one, it probably costs too much, anyway. I'm still intimidated by my digital camera, lol, and it's really very easy to use.

I am not up on all the technology either. My son was the guru around here and the reason I have a computer. Now, I have to hope I can figure things out or find someone else to help. He is really missed in so many ways!
Speaking of digital camera.. he has one that is still in his room. I guess I need to learn to use it. HaHa... I just recently began using a cell phone... mostly for safety reasons. However, it was my son, Jeremy's phone. So, using it is interesting.

Gotta keep trying.
