Earl's Mozzarella Meat Loaf

Ingredients

1 large
onion, coarsely chopped
1 Tbsp
olive oil
1
red bell pepper, chopped
1
garlic clove, finely chopped
1 tsp
basil
1/2 tsp
thyme
1.5 lb
lean ground beef
1/2 lb
ground pork
1 c
old fashioned oats
2
egg whites
4 oz
mozzarella cheese, cubed
1/2 c
grated parmesan cheese
2 Tbsp
chopped parsley
3/4 tsp
salt
1/8 tsp
pepper
1/4 c
ketchup

Step-By-Step

1Preheat oven to 375 degrees.
2Line jelly-roll pan with aluminum foil.
3Saute onion in oil in large skillet over medium heat 3 minutes.
4Add red pepper, garlic, basil and thyme; saute 5 minutes.
5Combine beef, pork, oats, egg whites, mozzarella, parmesan, parsley, optional salt and pepper in large bowl.
6Add vegetable mixture.
7Shape into large oval on prepared pan.
8Bake for 30 minutes.
9Brush loaf with ketchup.
10Bake 25 minutes or until cooked through.
11Let stand 10 minute before slicing.
