clean dirty rice

Dirty rice or rice dressing is a cajun staple. I call mine "clean" dirty rice because the "real" stuff has chicken liver or gizzards in it and I DETEST those. This can be made with instant rice or boxes of dirty rice, but if I do use the dirty rice mix, I still add my own veggies and spices to taste. This is a good side dish with fried chicken or it can be an entree with a salad to go with it. You can change the taste by adding a small can of tomato sauce or ketchup to the mixture after the rice and meat are mixed together. This makes it more like a jambalaya.

Ingredients For clean dirty rice

  • 1 lb
    ground chuck
  • 1 pkg
    bulk sausage (if i am in the mood for spicy, i use jimmy dean hot)
  • 1 c
    long rice
  • 2 c
    water
  • 1 Tbsp
    butter
  • 1
    small onion, chopped
  • 1
    bell pepper, chopped
  • 2 stick
    celery, chopped
  • 2 tsp
    minced garlic

How To Make clean dirty rice

    If using instant rice, cook according to box directions for 2 cups cooked rice. If cooking your own, put the cup of rice, 2 cups of water, 1 T butter, and a few shakes of salt in a sauce pan. Bring the water to a boil, stir the rice once, cover the pan, set heat to low and cook for 20 minutes.

    While rice is cooking, brown the ground chuck and bulk sausage in a skillet, breaking the meat into small pieces as it cooks. While meat is cooking add the onions, bell pepper, garlic and celery. After meat browns, drain the grease, lower the heat, cover the skillet and cook on low until the veggies are soft.

    When both rice and meat mixture are cooked, mix them together and season with salt, pepper, cajun seasoning, Mrs. Dash, Louisiana hot sauce, or whatever you like to use to season your food.
