Ingredients

2 Tbsp virgin olive oil
2 lb pork loin end roast, trim off fat

3 Tbsp pork rub blend (i used grill masters pork rub), divided
1 lg sweet yellow onion
1 lg jalapenos, fresh, diced
2 c chicken stock
12 oz belgian white ale
30 oz diced tomatoes & green chilies with chili fixin's seasoning
11 oz can chipotle white corn, drained
15 oz can white kidney beans, drained
1 Tbsp chipotle chili powder
1 tsp garlic powder
3 Tbsp raw blue agave nectar
1 c chopped cilantro, divided

Sandi's Notes:

I wanted to created a totally different kind of chili than my family was used to and have them love it just as much! I think I achieved that goal with this tasty pork and green chilie dish, adding chipotle corn and white beans as complimentary ingredients to this simply easy to make chili!

Sounds delicious. For years I made what my kids called chili corn carni using white shoepeg corn and served it with a bowl of rice and warm biscuits. This will be on my menu next. I can't wait to try it.

I have never heard of agave nectar in my life!....lol I have seen it as an ingredient in other recipes, what is it?......:)
