This recipe was originally given to me by my mother-in-law. I made a few adjustments and added more cheese to the recipe. This is a family favorite!

Ingredients For cheesy sausage casserole

  • 2 lb
    sage sausage
  • 1 pkg
    seasoning blend (onions/celery/red pepper)
  • 1 can
    original rotel
  • 1 can
    tomato puree
  • 1 pkg
    wide egg noodles (regular size bag)
  • 1/4 c
    olive oil
  • 2
    vegetable bouillon cubes
  • 8 oz
    shredded colby jack cheese
  • 8 oz
    shredded mild cheddar cheese
  • 16 oz
    shredded mozzarella cheese, divided

How To Make cheesy sausage casserole

    Preheat oven to 350 degrees. Lightly spray large casserole or lasagna pan with cooking spray.

    Brown Sage Sausage with seasoning blend. Drain and return to skillet. Add rotel and tomato puree. Allow to simmer over low heat, stirring occasionally.

    While sausage mix is simmering, bring large pan of water, olive oil and vegetable bouillon to a boil. Add wide egg noodles to water and cook until almost done. Drain and return to large pan. Add sausage mixture to the noodles and stir until all noodles are evenly coated.

    In separate bowl, mix colby jack, mild cheddar and half of the mozzarella cheese.

    In prepared pan, spoon 1/3 of the sausage and noodle mixture and cover bottom evenly. Spread 1/3 of the cheese mixture evenly over the sausage mixture. Repeat layers until there are no remaining sausage and cheese mixtures. Top with the remaining 8 ounces of mozzarella cheese.

    Bake uncovered at 350 degrees for 35 minutes. Let stand for 5 minutes before serving. This is great with garlic bread.
