Ingredients For cheesy pork casserole

  • 1 c
    crumbled blue cheese
  • 1 lb
    dry rigatoni pasta
  • 2 Tbsp
    olive oil
  • 3
    fresh boneless pork chops, sliced
  • 1/4 c
    diced medium red onion
  • 2
    large carrots, chopped
  • 1 Tbsp
    ranch seasoning
  • 1 Tbsp
    sea salt mixed with black pepper
  • margarine
  • 1 c
    heavy cream
  • 2 can
    condensed cream of chicken soup (10.75 oz)
  • 8 oz
    cream cheese, softened
  • 3/4 c
    half and half
  • 1 tsp
    seasoned pepper
  • 1 c
    shredded extra sharp cheddar cheese
  • 1 c
    shredded Swiss cheese
  • 1 c
    shredded colby jack cheese
  • 1/2 c
    dry bread crumbs

How To Make cheesy pork casserole

    Preheat oven to 350 degrees F.

    Coat a 9x13-inch baking dish with cooking spray. Add crumbled blue cheese evenly.

    Cook rigatoni pasta according to package directions; drain.

    Heat olive oil in a large, deep skillet over medium heat. Add pork chops, red onion and carrot, and saute for 6 minutes or until are tender. Stir in ranch seasoning and sea salt/black pepper. Remove from heat.

    Heat margarine in a medium saucepan over medium heat. Combine heavy cream, soup, cream cheese, half and half and seasoned pepper; stir well and let it simmer for 8 minutes.

    Mix in pork chop mixture and cooked rigatoni. Remove from heat.

    Pour into a prepared baking dish. Sprinkle evenly with cheeses and bread crumbs.

    Bake in the preheated oven for 30 minutes, or until the cheeses are bubbly.
