8 ozuncooked fettucine or linguine

2 Tbspvegetable oil

1 lgonion, chopped

1 mdred pepper, thinly sliced

1 mdorange pepper, thinly sliced

4 clovegarlic, finely chopped

1 lbsmoked sausage, cut into 1/2-inch slices

2 can14.5 oz. cans of fire roasted tomatoes, undrained

1 Tbspcajon seasoning

1/2 cwhipping cream

1/2 cshredded parmesan cheese
How To Make cajun pasta with smoked sausage

1In 5-quart Dutch oven, cook and drain fettuccine or linguine noodles as directed on package. Return to Dutch oven; cover to keep warm.

2Meanwhile, in a 12-inch non-stick skillet, heat oil over medium-high heat. Cook onion, bell peppers and garlic on oil for 3 to 4 minutes, stirring frequently, until vegetables are crisp-tender. Add sausage; cook 3 to 4 minutes, stirring frequently,until vegetables are tender.

3Stir in tomatoes and Cajun seasoning into sausage mixture. Stir in whipping cream; cook uncovered for 5 to 8 minutes, stirring occasionally, or until mixture is thickened.

4Add sausage mixture to noodles in Dutch oven; toss to combine. Sprinkle with cheese and chopped fresh parsley, if desired.
