Ingredients

2 Tbsp
butter, plus 1 tsp. olive oil
2
finely chopped green onions
1/2 c
finely chopped celery
1/2 c
yellow, green and red bell pepper
2
minced garlic cloves
1 tsp
cumin
1/2 tsp
cayenne pepper
1/8 tsp
freshly grated nutmeg
salt and freshly ground mixed pepper to taste
2
oregon myrtle leaves or bay leaf
1/2 c
half and half
1/2 c
tomatoes with green chiles or hot enchilada sauce
1/4 tsp
brown sugar, light
1 lb
ground sirloin or round steak or lean chuck
1 lb
uncased chorizo, or hot linquasi sausage, or hot italian or hot jim dean or ground pork

extra large eggs, slightly beaten
2 tsp
worchestershire sauce
1 1/2 tsp
hot red enchilada sauce or hot tabasco
1 1/4 c
about, bread crumbs, more or less

Directions Step-By-Step

Saute first 11 ingredients together. Add the half/half and enchilada sauce. Simmer for a few minutes. Remove the Myrtle leaf and cool.

Mix the beef, sausage, eggs, bread crumbs, and sauces together. Add the saute'ed ingredients and mix well together.

Place in a lightly buttered loaf pan. Bake at 360* for about 70 minutes. Drain the fat and make a gravy with the fat, flour, milk, salt, and pepper to taste.
