- MEATBALLS:
- 1 pound ground beef, leanest you can get
- 1 pound bulk pork sausage, no casings
- 1 sleeve ritz crackers, crushed
- 1/2 cup onion flakes, dehydrated
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 x large eggs
- 2 tablespoons olive oil, extra-virgin
- BOURBON SAUCE:
- 1 jar apricot preserves
- 1/2 cup dark brown sugar, firmly packed
- 1/2 cup chili sauce, heat to your liking
- 1/2 cup barbecue sauce, your favorite (i love sweet baby ray's)
- 1/4 cup water
- 1 cup bourbon
How To Make bourbon meatballs

Step 1MEATBALLS: Put all ingredients, except oil, in a large mixing bowl, breaking up the meat as you put it in. Mix together, using the tips of your fingers to gently combine everything without compacting the meat. Form into small 1" balls, I use a small ice cream scooper to make them nice & uniform. Heat 2 Tbsp of olive oil in a skillet & brown the meatballs, working in batches. Transfer the meatballs to a baking sheet & bake for about 10 minutes, until cooked through. Place cooked meatballs into the sauce & let heat through until ready to serve. Serve on a plate with toothpicks, a drizzle of sauce & lots of napkins. Serve a bowl of sauce on the side for extra dipping.

Step 2BOURBON SAUCE: Combine all ingredients (except bourbon) in a sauce pot & bring to a simmer. Simmer gently for about 10 minutes until thick. Take off heat & stir in bourbon; stir to combine.
