We make a meal on this dish. Nothing else is needed unless you want to slice some fresh tomatoes or have a small salad. That is, of course, not counting the corn bread that is an automatic accompaniment here in Texas.

Ingredients For blackeyed peas

    fresh shelled blackeyed peas with snaps (can be frozen, but not canned)
  • 1
    chopped onion
  • 2
    celery stalks, chopped
  • 10 sm
    red new potatoes
  • 1
    slab salt pork or 1/2 pound lean diced ham steak

How To Make blackeyed peas

  • 1
    Cover ingredients in a large pan (dutch oven). Can use either water or broth or a combination. Cook just until peas and potatoes are tender. Salt to taste.
