BBQ Pulled Pork Pastry Cups

My family likes finger food. This is perfect for any party or tailgate gathering.

2-3 lb
pork shoulder roast
1 bottle
barbeque sauce
1 pkg
puff pastry sheets, thawed
1 c
cheddar cheese, shredded
1 large
red onion, sliced

Directions Step-By-Step

Just put the pork shoulder roast in the Crockpot. Add sliced red onion. Cover with a bottle of your favorite BBQ sauce and let cook all day. Pull the meat out and with two forks shred the pork and put it back in the sauce.
Cut each sheet of puff pastry into 12 squares and place inside (greased) mini muffin cups. Place a 1 tablespoon pulled pork inside each cup. Put a teaspoon of cheese on top of meat,
Bake in a preheated 375°F oven till edges are a light brown, 10-15 minutes.
Cool a few minutes before removing from muffin tins.
