Today I was going through my "junk" drawer looking for a specific recipe for my husband's cousin's meatloaf. Never did find it but I did find this recipe and made it for Sunday dinner with mashed potatoes and green beans.

Ingredients For bacon wrapped pork loin with brown sugar glaze

  • 1 pkg
    boneless pork loin (4-6 lbs)
  • 4-6 slice
    bacon
  • RUB MIXTURE
  • 1 tsp
    chili powder
  • 1/2 tsp
    paprika
  • 1 1/2 tsp
    salt
  • 1/2 tsp
    black pepper, coarse ground
  • 1/2 tsp
    cumin (ground)
  • 1 tsp
    cinnamon (ground) or 1/2 tsp depending on preference
  • GLAZE
  • 1 c
    light brown sugar, packed
  • 2 Tbsp
    flour
  • 2 Tbsp
    apple cider vinegar
  • 1/2 tsp
    dry mustard

    Preheat oven to 350F.

    Place pork loin in a roasting pan. Combine the RUB ingredients and rub over the pork. NOTE* My husband prefers less cinnamon.

    Cut each strip of bacon in half crosswise and lay them over the pork loin. Roast (uncovered) for about 1 1/2 to 2 hours, or until pork reaches 150 degrees.

    Make glaze after baking pork loin to 150 degrees. Combine the brown sugar, flour, cider vinegar and dry mustard in a saucepan. Bring to a simmer and simmer for about a minute and one-half. Pour over the pork and return to oven. Roast for about 15 to 20 minutes longer, or until pork registers 160 degrees. NOTE: I bought one with a pop-up timer.
