Ingredients
- 2 large vidalia onions, sliced
- 1 - 16 oz packages penne pasta
- CHEESE SAUCE:
- 1 tablespoon butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon Dijon mustard
- 2 cups milk, skim
- 4 ounces sour cream, fat-free
- 4 ounces gruyere cheese, shredded
- 4 slices bacon, cooked crisp & crumbled
- TOPPING:
- 4 ounces Panko bread crumbs
- 1/4 cup basil, fresh, chopped

Step 1Heat a large skillet over medium heat & spray with cooking spray. Add onions, cook, uncovered 10 minutes, stirring occastionally until tender & starting to brown. Reduce heat to medium low & cook 35 - 40 minutes longer, stirring every 5 minutes or until onions are deep golden brown; set aside to cool.

Step 2Cook pasta according to directions on package; omiting the salt. Prepare a 11" x 7" (2 qt) baking dish by spraying with cooking spray.

Step 3While pasta is cooking, make cheese sauce. In a 3 qt saucepan, melt butter over medium heat. Stir in flour, salt, pepper & mustard with whisk & cook 2 minutes; stirring occasionally, until mixture is smooth & bubbly; remove from heat. Slowly add milk. Heat to boiling, stirring constantly; boil & stir 1 minute. Remove from heat; stir in cooled caramelized onions & all remaining sauce ingredients.

Step 4Preheat oven to 400 degrees F.

Step 5Drain pasta. Pour pasta into dish & keep warm.

Step 6Pour cheese sauce over pasta in baking dish. Sprinkle with topping ingredients. Bake, uncovered, 15 minutes or until heated through (topping will not be browned).
