Ingredients For bacon caramelized onion mac & cheese

  • 2 lg
    vidalia onions, sliced
  • 1 - 16 oz pkg
    penne pasta
  • CHEESE SAUCE:
  • 1 Tbsp
    butter
  • 2 Tbsp
    all purpose flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/2 tsp
    dijon mustard
  • 2 c
    milk, skim
  • 4 oz
    sour cream, fat-free
  • 4 oz
    gruyere cheese, shredded
  • 4 slice
    bacon, cooked crisp & crumbled
  • TOPPING:
  • 4 oz
    panko bread crumbs
  • 1/4 c
    basil, fresh, chopped

How To Make bacon caramelized onion mac & cheese

    Heat a large skillet over medium heat & spray with cooking spray. Add onions, cook, uncovered 10 minutes, stirring occastionally until tender & starting to brown. Reduce heat to medium low & cook 35 - 40 minutes longer, stirring every 5 minutes or until onions are deep golden brown; set aside to cool.

    Cook pasta according to directions on package; omiting the salt. Prepare a 11" x 7" (2 qt) baking dish by spraying with cooking spray.

    While pasta is cooking, make cheese sauce. In a 3 qt saucepan, melt butter over medium heat. Stir in flour, salt, pepper & mustard with whisk & cook 2 minutes; stirring occasionally, until mixture is smooth & bubbly; remove from heat. Slowly add milk. Heat to boiling, stirring constantly; boil & stir 1 minute. Remove from heat; stir in cooled caramelized onions & all remaining sauce ingredients.

    Preheat oven to 400 degrees F.

    Drain pasta. Pour pasta into dish & keep warm.

    Pour cheese sauce over pasta in baking dish. Sprinkle with topping ingredients. Bake, uncovered, 15 minutes or until heated through (topping will not be browned).
