Apricot Glazed Pork Roast

Hubby said this is a def KEEPER!!
- 2 to 4 lb
- pork loin
- 1/2 jar(s)
- apricot preserves (plus 2 tablespoonful for the top of the roast)
- 1 1/2 Tbsp
- balsamic vinegar
- thyme, dried ( i used 2 shake's of the bottle)
- salt and pepper to taste
I paired this up with oven roasted garlic/EVOO red potatoes I Put them right in the pan with the roast!! YUMMY!!
